Dreaming of this dinner tonight! ? Seared sea scallops, creamy cauliflower mash, sautéed greens, and blistered tomatoes look fancy take just 30 minutes from start to finish to face plant (really!) ?. Unlike chicken and beef, which seem to always be either undercooked (or overcooked (dry chicken breast is the *worst* amiright), scallops are pretty much foolproof, sear in under 6 minutes, and make you feel like a domestic goddess ??. What are you guys cooking this evening?! Tell me in the comments below! – #whatsonmyplate: SEARED SCALLOPS: heat 1 tablespoon @fourthandheart garlic ghee in a pan for a minute, add 1 lb. sea scallops (make sure to pat them VERY dry with paper towels first); sear 2-3 minutes per side •• CREAMY CAULIFLOWER MASH: 1 head cauliflower + 3 garlic cloves + 2 tablespoons ghee (or butter) + 3-4 tablespoons milk (I use almond) + 1/4 cup parmesan + salt & pepper, to taste. Place cauliflower and garlic in a steamer over a large pot of water; steam until tender. Transfer to a food processor and add remaining ingredients. Blend until smooth •• sautéed spinach w/ garlic & parmesan cheese • pan-blistered tomatoes.

Mini Meatloaf Muffins It’s Natalie from @tasteslovely! Not only is this the juiciest, most flavorful meatloaf, but the mini muffins bake in a fraction of the time! Plus, they’re just so dang cute. This meal makes a perfect meal prep and/or freezer meal! . Recipe below, swipe left for tips + FAQs! . INGREDIENTS: ∙2 pounds ground beef (I use 85% lean) ∙ 1 tablespoon olive oil ∙ 1 large onion, diced ∙4 cloves of garlic, grated or finely minced ∙1 cup almond flour ∙1 cup Whole30 friendly ketchup (I *love* @truemadefoods ketchup the best!), divided ∙1 bunch of parsley, finely chopped ∙2 eggs ∙2 teaspoons salt ∙2 teaspoons pepper . DIRECTIONS: 1. Preheat your oven to 350ºF. Get out your muffin pan. 2. Heat a large skillet over medium heat. Add the olive oil, onion, garlic + pinch of salt. Cook for 5-7 minutes until the onion is soft. 3. In a large bowl, add the ground beef, cooked onion mixture, almond flour, 1/2 cup of ketchup, parsley, eggs, salt + pepper. Stir to combine. (I like using a potato masher to mix up my meat!) 4. Fill each muffin pan with 6 tablespoons of the meatloaf. I love using a large cookie scoop, 2 scoops with the cookie scoop fills each muffin cup. Flatten down with your hands to completely fill the muffin pan. Top the meatloafs with the remaining 1/2 cup ketchup. 5. Bake for 25 minutes. Allow to cool for 5 minutes before removing from the muffin pan. Serve warm. 6. I love mine with roasted green beans and mashed cauliflower! 7.
